These have been my favorite healthy, go-to cookie ever since my sister invented the recipe. It's nothing too difficult, nor spectacular in the ways of ingredients or preparation. But they are soft, delicious, and also happen to be very low in fat, high in fiber, and just all around yummy.
Mimi's Healthy Oatmeal Cookies:
3 cups oats
2 mashed bananas
1 cup organic brown sugar
1 egg (or 2 egg whites)
1 cup whole wheat flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamin
1/2 tsp nutmeg
1 tsp vanilla
Bake at 375' for 8-9 min on an ungreased cookie sheet.
Enjoy for dessert or in the morning with coffee!

I tried these last night. Took out the sugar and added a splash of almond syrup and chopped up dark chocolate. They come out almost like yummy breakfast scones!

I just tried this recipe again today. I took out the sugar and replaced it with about 1/2 cup (or less) of honey. I also added 1 & 1/2 cups of sweetened coconut flakes. YUM!
